This famous quote attributed to the great Albert Einstein aptly describes how 43-year-old Rommel Castro managed to get out of a slump and start a thriving food business in the heart of Dubai in the United Arab Emirates (UAE).Like many overseas workers, Castro was among those who lost their jobs after the world economy took a tailspin as a result of the quarantine lockdowns imposed when the Covid-19 pandemic hit.Castro moved to Dubai in 2009 and worked as a department store salesman. He later transferred to a travel agency where he became a branch operations manager in 2017.'Kaya nakaipon ako ng puhunan sa negosyo dito sa Dubai (That's how I was able to save money which I used as capital to put up a business here in Dubai),' Castro saidCastro and his partner, Mitch, who used to work as counter cashier in a supermarket, opened a garments retail store in 2018. The business was among the casualties of Covid.'Nawala lahat — trabaho at negosyong kasisimula pa lang (All was gone — my job and the small business we had just started),' he recalled.After shuttering their physical store, they tried their luck selling whatever's left in their inventory online.Slowly, they managed to recover their losses. They then thought of trying their luck again in business.'Naisip namin na mag-food business kasi parehas kaming may background sa pagkain (We thought of going into the food business because we both have a background in that field),' Castro said.Mitch's family has a barbecue business which specializes in chorizo de Cebu, a local sausage unique to the province.Castro, meanwhile, used to work for a popular fast-food chain in the Philippines.As a working student for six years, he worked as a service crew member in the fast-food chain's Quezon Avenue branch in Quezon City where he initially got paid P190 a day.'Madalas kapag naka-break, mahilig akong kumain sa gotohan sa gilid nung branch na pinapasukan ko sa Pilipinas (Most of the time, I'd spend my break time at a food stall that sells porridge beside our restaurant),' Castro said.Their past life experiences gave the couple an idea to open a food stall selling Filipino street food in a night market in Dubai.
