This is probably one of my favorite appetizers to serve as I grew up with this. My mom made it a point to buy a kilo or two whenever her fish vendor has fresh supply of dulong (silver fish). Yes, it has to be fresh and has to be cooked as soon as possible to maximize the flavor.
Dulong is a tiny fish and is silver in color (hence the name). When cooked, its color becomes white. There are other recipes for dulong and this dulong in olive oil is great to serve as appetizer when entertaining or to be eaten as a snack.
