What an amazing discovery colcannon is. By the time I made it, I did not look at mashed potatoes the same way again.
Colcannon is the Irish version of mashed potatoes where you put vegetables – usually cabbage – as you go on your merry way in preparing this well-loved side. Potatoes are a staple not only here but everywhere. Some countries use potatoes as their go-to for carbs, especially those that are not used to having rice as their staple. We also incorporate potatoes in many of our stewed dishes and in a vegan/plant-based kitchen, potatoes also act as good substitute for many things, such as in making cheeses.
