Filipino cuisine through the years

BEFORE Spain, before America colonized the Philippines, and before the Japanese Occupation, our country already had a thriving culinary industry.

It had not been at all difficult for early Pinoys to have delectable dishes as even to this day, the Philippine islands abound with spices such as ginger, garlic, onions, lemongrass, and bay leaf— which for the colonizers, actually, were reason enough to die for.
